For over 30 years, Aidells has been crafting artisan sausage in unexpected flavor combinations. We’ve also added a few other items to the mix - our meatballs, mini sausages, breakfast links, and burgers feature surprising flavors in different ways. And they’re all still made in small batches with real, all natural ingredients.

Our Story

In 1983, Chef Bruce Aidells couldn’t find the flavors he wanted in a sausage, so he made his own. Inspired by a traditional French sausage made with pheasant and apple, he created his original chicken & apple recipe by hand in his own kitchen. Then he took it out into the world, selling his hand-made sausages door-to-door to restaurants in Berkeley, California. Chef Bruce continued using his creativity and imagination in coming up with even more unexpected flavor combinations - all made in small batches and with only the finest, all natural ingredients. They were such a hit, he eventually started selling them directly to folks at local farmer’s markets and grocers. Today, we’re continuing Chef Bruce’s legacy of creating some of the most unexpected flavor combinations in all our delicious sausages.

Featured Recipe: Chicken & Apple Sausage with Apples and Onions

Melt 1 tablespoon of butter in a large skillet over medium heat. Add 4 sausages whole and brown for 5 minutes on each side. Remove the sausages and add 1 tablespoon of butter and 1 thinly sliced red onion to the pan. Sauté over medium heat for 5-7 minutes, or until the onion is soft. Add 2 small cored and sliced green apples and sauté for 2-3 minutes longer. They should be cooked but still firm. Pour in ¼ cup of sweet wine or apple cider and reduce over high heat for 3 or 4 minutes, until the sauce is syrupy. Add 1 cup heavy cream, reduce by half, and return the sausage to the pan. Cook covered for 1 minute more. Cook 1 lb pasta in a large pot of well-salted, boiling water until al dente. Mound the pasta on a platter, add the sauce, and serve.
